Rename audio_role to video_role to make it work with signlanguage

In some cases we could end up with two subtitles
but we only have "one" subtitle. like one from HLS and one from

Added some boolean flags to the postprocess
...
* replaced `--remux` with `--no-remux`
* added `--no-merge`
* added `--no-postprocess`
* added `--keep-original`
This should be sufficient to consider issue #1194 fixed.
